Questa e’ la frase che quel brutto matto di Jack Nicholson scriveva e riscriveva in uno dei suoi momenti di follia in Shining ( almeno nella versione italiana del film), e che io, da vera psicopatica, mi ripetevo mentre sta mattina alle 5:20 iniziavo a scrivere questo post. Dopo l’ennesimo risveglio forzato ( “mammma metti coperta”, “mamma acqua” , mamma ho fatto un brutto sogno”) ho pensato che tanto valeva dare inizio alla giornata e portarsi avanti con un po’ delle cose che avrei voluto fare.
Adesso per voi ho una domanda da un milione di dollari: ma a quale eta esattamente iniziera’ a dormire sempre tutta la notte ?
In questi anni di sonno sballato, ho notato che i momenti piu’ creativi della giornata, quelli in cui mi vengono piu’ facilmente in mente le cose che devo fare e come le vorrei fare sono tra le 5 e le 6 di mattina e tra le 11 e mezzanotte.
Sono i momenti in cui la pallina da flipper che risuona nel mio cervello facendomi stare tutto il giorno a pensare e ripensare a cosa sia meglio fare, si ferma e lascia spazio a pensieri piu’ liberi, ma allo stesso tempo piu’ chiari e concreti. Peccato pero’ che il sonno annebbi tutto questo e renda sempre tutto molto difficile.
Comunque sta mattina alla 5:20 la scrittura di questo post e’ stata nuovamente interrotta da un altro brutto sogno ed e’ finita con la piccola nel letto con me per un’ultima ora di sonno prima che la sveglia suonasse definitivamente. L’ora migliore della nottata visto che io ho sognato la mia nonnina, che mi manca terribilmente e lei era bella e sorridente e io adesso sono tanto felice.
La ricetta che avevo iniziato a scrivere e’ quella delle trofie con crema di porri e gorgonzola, pancetta affumicata e Pecorino Romano DOP Brunelli. Una ricetta velocissima preparata una delle scorse domeniche che pero’ e’ sempre un successo.
Ovviamente basta avere una buona pasta dei porri freschi, del gorgonzola e della pancetta di qualita’. Il piatto e’ semplice e la sua forza sta proprio nella bonta’ degli ingredienti.
Ingredienti per 4 persone
3 porri
20 g di burro
olio extravergine d’oliva
100 g di pancetta affumicata
120 g di gorgonzola dolce
50 g di Pecorino Romano DOP Brunelli
latte fresco q.b.
320 g di trofie
Procedimento:
eliminate dai porri la parte verde, lavateli e tagliateli a rondelle molto sottili.
In una padella fate appassire nel burro e nell’olio d’oliva mezzo scalogno tagliato finemente, poi aggiungete il porro e fate cuocere lentamente aggiungendo un goccio di acqua.
quando il porro sara’ ben cotto aggiungete il gorgonzola a pezzetti, amalgamate bene e se serve utilizzate un pochino di latte per rendere il tutto piu’ cremoso.
Cuocete le trofie in abbondante acqua salata.
Durante la cottura delle trofie, in un’altra padella fate rosolare la pancetta con un filo di olio, quando sara’ croccante mettetela ad asciugare su un foglio di carta assorbente.
Scolate la pasta e fatela saltare nella padella del condimento, aggiungete il Pecorino grattugiato e impiattate aggiungendo la pancetta.

That ‘s the phrase that the crazy Jack Nicholson wrote and rewrote one of his moments of madness in the movie Shining ( at least in the italian version of the movie) and it is also the same phrase that I was repeating this morning at 5:20 when I began to write this post.
After yet another forced awakening ( ” Mom put my blanket back “, ” Mom water please,” Mom , I had a bad dream ” ) I thought I might as well start the day and move forward doing some of the thing on my to do list.
Now I have a question for you, a million dollars one: at what age exactly will she start sleep ing through the whole night? I mean, every night for the whole night?
In these years of terrible sleep , I noticed that the most creative moments of my day, are between 5 and 6 am and between 11 and midnight.
They are the moments when the pinball that resonates in my brain making me stay all day to think and rethink about what is the best thing to do stops and leaves room for more easy thoughts. Concrete thoughts that are clear and concrete . Even if then the absence of sleeping makes everything difficult and foggy.
However this morning at 5:20 when I started to write this post I was interrupted again by another “bad dream” so I got back to my bed with her this time, for for one more hour of sleep before the alarm rang. I have to say that that was the best time of the night. I dreamed about my grandmother, she was there with me, in the garden of my mother’s house, she was beautiful, happy, smiling and calm. I miss her so terribly and I was so happy to see her!
The recipe that I started to write and that I left half completed is:” trofie with creamy leeks, gorgonzola, smoked bacon and Pecorino Romano DOP Brunelli . A fast recipe prepared one of the last Sundays that it’s always a hit.
Ingredients for 4 people
3 leeks
20 g of butter
extra virgin olive oil
100 g smoked bacon
120 g of sweet gorgonzola
50 g of Pecorino Romano DOP Brunelli
half a cup of fresh milk
320 g of Trofie
procedure:
removed the green part of leeks, wash and cut into very thin pieces .
In a skillet sauté the finely chopped shallots in butter and in olive oil, then add the leek and cook slowly adding a little water.
When the leeks will be well cooked, add the gorgonzola cheese into small pieces, mix well and if needed use a little milk to make it more’ creamy.
Cook the trofie in boiling salted water .
During the cooking of Trofie, in another pan, fry the bacon with a little oil, when it will be crispy put it out to dry on a paper towel .
Drain the pasta and sauté in the pan with the sauce , add the grated Pecorino cheese and serve by adding bacon on top.
